You will need:
6 cups of water 8 TBSP of pre-bought, rice-free karawya mixture (if you don't have this available to you, see alternative below) 4 TBSP rice flour 1 cup sugar (adjust to taste) dash of salt homemade karawya mix (enough for the recipe above): 7 TBSP ground caraway 1 TBSP ground cinnamon 1/2 TBSP ground fennel OR anise (optional) **see below for instructions**
**DID YOU KNOW? Karawya is traditionally served when someone has a baby? It has many health benefits for the new mother. When family and friends come to visit the new mom, they are served a steaming bowl of karawya. This dessert can be served cold but I prefer it fresh off the stove. FIRST and most importantly, stay by your pot so your karawya doesn't burn and it doesn't overflow. Mix your rice flour and sugar in a bowl (so your rice flour dissolves nicely without clumping). Set aside. Bring the water to a boil and add your karawya mix + salt (without rice). Mix on med-high heat constantly with a wooden spoon for 5-7 minutes. If your karawya threatens to overflow, lower the heat slightly. Then, while mixing, spoon your rice/sugar mixture into the pot, one spoon at a time. Take your time so you don't get clumps. After adding all the rice/sugar, let your karawya boil for 10 minutes on med heat to cook the rice and thicken. Stir occasionally If you like really thick karawya, you can boil for an additional 5 minutes or until desired consistency. Top with: Crushed walnuts, pecans, almonds, pistachio, any nut you like. Pumpkin seeds Unsweetened shredded coconut ANY unsweetened topping of choice. The idea is for the topping to cut through the sweetness of the karawya. SERVE immediately.
