In a small pot, boil your rice for 8-10 minutes, as if you were boiling pasta. If you have extra water after 10 minutes, strain your rice. In a large heavy-bottomed pot, bring your milk to a simmer while constantly mixing. Once your milk has reached boiling point, add cooked rice. Tasting to make sure rice is soft and cooked through. Add sugar, you can add more or less but 2 cups is a good starting amount. Dissolve your cornstarch into some water-- carefully! The more water you add to the cornstarch, the longer you have to cook your milk since you have to reduce it by cooking the water out. So add enough water to the cornstarch so that it is fluid in texture and no longer a powder. Continue to mix. Add orange blossom water. Mix and simmer milk until it thickens and looks like mine in the video at 2:19. Pour into serving dishes and serve. This rice pudding can be enjoyed warm or you can let it cool at room temperature and then chilling it for 4 hours before eating. Pistachio is a delicious way to decorate your rice pudding.
