For the Pumpkin cookies:
Mix the first 6 ingredients together. Mix the rest of the ingredients separately. Mix both mixes together. Drop balls of dough onto a lined baking sheet. Bake until golden on top and bottom, for my oven this was 20 minutes at 350F.

Preheat your oven to 375 F. Sautee your onion on the stovetop until golden and cooked, almost caramelized. Shred your chicken and add to the onions. When the chicken has been reheated, take it off the stove. Add the lemon, olive oil, sumac, salt and pepper. Taste as you go. Seasonings are to taste. I like it especially lemon-y. Mix in your pine nuts (if using). Use some olive oil to coat both sides of the tortilla. Place a log of chicken filling on the tortilla and roll.
