You can use canned, drained and washed garbanzo beans. I like to cook my beans fresh and use some of the liquid to add to my msabaha too. For every 1 cup of cooked garbanzo beans, you will need: 1/3 cup Tahini 2 TBSP lemon juice (Personally I like closer to 3 TBSP of lemon...) 1/2 clove garlic Salt + Pepper to taste Process until creamy. Drizzle (generously) with some olive oil. Paprika, cumin, zaatar, sumac, whole garbanzo, toasted nuts WHATEVER you like for garnish. *CUMIN is popular because it fights bloating from the beans. I also would like to say, you can adjust this basic recipe to your family's liking. If you like it thicker, add more tahini. If you want it thinner, add more lemon. If you want to thin it out without adding lemon, you can add some of the garbanzo liquid from cooking to thin it out. It's so delicious. Now go make some.

You will need:
Ingredients: ▪16 oz garbanzo beans soaked overnight + 1 Tbsp baking soda ▪10 oz split fava beans soaked overnight IN SEPARATE BOWL ▪1 bunch parsley ▪1 bunch cilantro ▪1 bunch green onion ▪3-5 garlic cloves ▪UP TO 3/4 cup water to help your mixture process *pour your water slowly* ▪2 tsp salt* ▪1/2 tsp black pepper* ▪1/2 tsp red pepper * ▪1 tsp ground coriander ▪1 tsp baking powder ▪1/2 tsp all spice ▪1 Tbsp ground cumin *salt and pepper is always to taste, feel free to use more or less* To make the ultimate tahini sauce for falafel dipping: •2 Tbsp tahini •4 Tbsp yogurt •1/2 lemon *or more depending on your lemon; sauce should not be thick* Pulse all in a food processor. WHAT TO DO: Start by soaking the beans overnight. In the morning, drain your beans. Set up your parsley and cilantro like I show in the video and chop off the stems. Clean the green onions as well. Process the greens and the beans in a food processor. If you put the greens in the processor bowl first, you will have a more accurate knowledge of how much water you will need. DO NOT exceed 3/4 cup water. You may find that you do not need any water. This is simply to help the processor along. Remember, it is easier to add water than take it out. Add the garlic and all other spices. You will also need a falafel mold or just use two spoons and make little ball shapes. You need corn oil or other oil for deep frying and a deep fryer skimmer. Heat your oil to 375F and deep fry the falafel until brown, turning for even cooking. Falafel batter freezes beautifully. I recommend not adding baking powder or salt if you will freeze it. When you're ready to make them, thaw your falafel batter and mix well. At this point, add the baking powder and salt so it stays fresh and crispy. Bon appétit!
