Ramadan is the best time to try new recipes because you have so much free time on your hands and everything tastes so much better when you have to wait before you can eat it. Here's how to make a very easy and totally satisfying, subtly sweet, ma'rook bread.
First prepare the dry ingredients by grinding the spices. If you do not have mahlab or fennel, just use cinnamon, anise, cloves, ginger, nutmeg, pumpkin spice. HOWEVER, it will not be true ma'rook bread but it will still taste pretty fantastic. In another bowl mix the yeast, water, milk, yogurt, and sugar together. Add two spoons of your flour mixture and let it rest, covered, for half an hour. After 30 minutes, add the egg, oil, and vanilla. Mix well. Slowly add all flour and knead for 8-10 minutes or until smooth. Coat your dough with a splash of vegetable oil and cover. Turn your oven light on, while the oven itself is turned OFF, and let your dough rest in there for 1 hour. You can make any shape you like with your ma'rook bread. Most traditionally, the dough is spread out in a circular pan but I chose to braid my bread because it looks impressive and beautiful. Instructions for the braid are in the video. Make your egg wash and sprinkle with sesame seeds. Bake your bread on a baking sheet for 30 minutes at 350F, until it looks golden brown and emits a lovely warm fragrance.
